A picnic staple, this version amps up the flavor with the addition of curry powder.
INGREDIENTS
- 3 cups cooked Elmwood Stock Farm chicken, chopped into bite-sized chunks
- ½ cup mayonnaise
- 2 celery stalks, finely diced
- 2.5 tsp curry powder
- 1 tsp Elmwood Stock Farm honey
- 1 tbsp lemon juice
- 1.5 tsp dijon mustard
- Salt and pepper, to taste
- ½ cup raisins (optional)
- Lettuce, for serving
- Tomato slices, for serving (optional)
- Sandwich bread, for serving (optional)
INSTRUCTIONS
Add the chicken, mayonnaise, celery, curry powder, honey, lemon juice, dijon mustard and raisins (if using) to a bowl and stir to combine.
Taste and add salt and/or pepper as needed to get the flavor the way you like. Serve on lettuce or in a sandwich.
