Roast Beef Sandwiches

Skip the supermarket and make delicious roast beef sandwiches from scratch using an eye of round roast. It’s easier than you might think!

INGREDIENTS

  • 2-3 lb Elmwood Stock Farm Boston Eye of Round Roast, trimmed of any fat
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary plus some extra sprigs for the pan
  • 1/2 of a yellow onion, sliced
  • Whole head of garlic, top sliced off
  • 2 tablespoons butter
  • Rye bread
  • Whole grain mustard
  • Pickles, for serving

INSTRUCTIONS

Preheat two skillets over medium high heat. Meanwhile, let the roast come to room temperature.

Mix together the salt, pepper, garlic, olive oil and rosemary in a small bowl and then rub all over the roast. Add to one of the skillets along with the head of garlic, rosemary sprigs and butter. Cook while basting with butter until the the thickest part of the roast reaches around 135º F inside for a medium-rare cook. Remove and let rest for 12 minutes before slicing.

Meanwhile, in the other pan sauté the onions until soft and translucent.

To assemble sandwiches, spread whole grain mustard on rye bread and pile high with onions and roast beef slices. Serve with pickles on the side.
