Roast Beef Sandwiches

Skip the supermarket and make delicious roast beef sandwiches from scratch using an eye of round roast. It’s easier than you might think!

  • 2-3 lb Elmwood Stock Farm Boston Eye of Round Roast, trimmed of any fat
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary
  • 2 tablespoons fresh thyme leaves
  • Rye bread
  • Whole grain mustard
  • Pickles, for serving

Preheat the oven to 450º F. Let the roast come to room temperature while the oven preheats.

Mix together the salt, pepper, garlic, olive oil, rosemary and thyme in a small bowl and then rub all over the roast. If you have a leave-in thermometer, insert into the roast. Put the roast into the oven directly on the middle rack with a pan on the rack below to catch drippings.

Bake for 15 minutes, then reduce the heat to 250º F and let the roast bake until the thickest portion reaches around 135º F inside for a medium-rare cook.

Remove from the oven and let it rest for 12 minutes before cutting into slices. To assemble sandwiches, spread whole grain mustard on rye bread and pile high with roast beef. Serve with pickles on the side.
