With years of beef-quality grading information from our abattoir, John has been able to refine Elmwood Stock Farm’s herd genetics and grazing techniques. There’s been few times in John’s career where he’s had a beef hit Prime. It’s a huge undertaking, taking 3+ years of planning to get a chance at making the mark. We’re also committed to never feeding grain, always grazing on natural forage, and delivering a healthier, wholesome product.
Prime is hard. Grass-finished Prime is a unicorn.
It’s hard to overstate how special and exciting this is for us. Especially for John.
It takes a ludicrous amount of dedication, attention, and planning on his part to achieve Prime in a grass-fed, grass-finished, closed organic herd. But when it happens, it’s like magic. We’re proud of John, proud of us, and excited to share the results with you.
“Our family has always raised Angus cattle, which are known to produce quality steaks. We introduced Wagyu genetics to our beef herd to further improve the customer’s eating experience,” John says.
“Prime” is the USDA’s highest quality grade, awarded to only 2% of all beef produced in the United States. Prime beef is superior in taste, tenderness, and juiciness due to the abundant marbling found throughout the meat. Deemed the “holy grail” of beef, it’s often reserved for high-end restaurants, cruise ships, or hotels, making it difficult for the average consumer to find.
Factor in other qualifiers like grass-fed, grass-finished, Wagyu-Angus, and organic, and you’d be hard pressed to find a product like ours available for individuals anywhere.
