You might remember variations of these sweet potato beef bowls going viral on social media. Popular or not we love how hearty and nutritious they are, especially when using our 100% grass-fed and organic ground beef! Feel free to customize to your family’s tastes.
INGREDIENTS
- 3 sweet potatoes, peeled and cubed
- 3 tablespoons extra-virgin olive oil
- Salt and pepper
- 1 lb Elmwood Stock Farm ground beef
- 1 tablespoon tomato paste
- 2 tablespoons of your favorite beef seasoning
- 1½ cups cottage cheese
- 2 avocados, cubed
- 4 tablespoons hot honey
INSTRUCTIONS
Preheat oven to 425F, or an air fryer to 400F. Toss the sweet potato cubes in the olive oil and season well with salt and pepper. If using an oven, bake in a single layer for 25-30 minutes until fork tender. If using an air fryer, fry in a single layer for 10-15 minutes until fork tender.
Meanwhile, cook ground beef in a skillet over medium high heat, breaking it up as it cooks. Stir in the tomato paste and seasoning, and cook the beef until cooked through.
Assemble by portioning out the beef mixture into four separate serving bowls. Top with cottage cheese and avocados and drizzle with hot honey.
