Tomato Gratin

Fresh summer tomatoes shine in this easy to throw together and flavorful baked dish.

INGREDIENTS

  • 5 medium-large tomatoes, any variety
  • ¾ cup bread crumbs
  • ¾ cup grated Pecorino Romano cheese
  • ½ cup chopped parsley
  • 2 cloves of garlic, minced
  • Salt and pepper, to taste
  • Olive oil

INSTRUCTIONS

Preheat oven to 350 degrees F.

Slice tomatoes in half and sprinkle with salt and pepper. Prepare a shallow baking dish with a little of the olive oil.

Mix together the bread crumbs, cheese, parsley and garlic. Taste and add salt and/or pepper as needed to get the flavor the way you like.

Arrange all the tomato halves in the baking dish (it’s okay if they overlap a little). Spoon some of the mixture on each halve and sprinkle with olive oil. 

Bake for 30-40 minutes until the bread crumbs are golden brown and the cheese and tomatoes are bubbly. Remove from the oven and serve.
